Catfish Recipes:

BAKED CATFISH

1 two-pound catfish
1/2 teaspoon garlic salt
1 medium onion (chopped)
3 fresh tomatoes (chopped) (or cup stewed tomatoes)
1/4 teaspoon thyme
1/4 cup lemon juice
1 tablespoon melted butter
3 tablespoons bacon fat
1/8 teaspoon pepper
1 green pepper (chopped)
1/2 cup water
1/4 cup bread crumbs
1 teaspoon grated lemon rind

Dress and split catfish; place in greased shallow baking dish. Sprinkle with garlic salt and pepper. Heat bacon fat in skillet; add chopped onion, chopped pepper and tomatoes. Saute for five minutes. Add thyme, lemon juice and water. Pour over fish. Combine bread crumbs, melted butter and lemon rind; sprinkle over fish in casserole. Bake (uncovered) at 350 for 45 minutes. Remove to heated platter; garnish with sprigs of parsley and lemon wedges. Serve with potato (baked in same oven heat), cabbage slaw and cornbread or hushpuppies. Serves four.
